Here’s a delicious and easy chicken recipe that can be prepared ahead of time and just heated up later.

Ingredients:
4 boneless medium-thickness chicken cutlets
Egg or egg substitute
Seasoned bread crumbs
Cooking oil spray
Red and yellow peppers or asparagus
White wine or chicken broth
Juice from 1/2 lemon

Directions:
1. Lightly pound the chicken breast cutlets to a uniform thickness so they cook evenly.
2. Squeeze lemon juice on chicken and let it soak in for a fewminutes.
3. Preheat oven to 400 degrees.
4. Dip the chicken into the egg and then coat with breadcrumbs.
5. Set on a heated baking sheet that has been sprayed with oil.
6. Bake chicken for 15 to 25 minutes until chicken is fully cooked.
7. Add vegetables to baking sheet about 10 minutes before the chicken is fully cooked. As soon as vegetables are cooked, yet firm, remove from oven.
8. Heat up later or the next day in the oven with chicken broth or white wine.
