Sautéed Shrimp and Broccoli

Are you trying to eat healthy? Your favorite motivational stones will help remind you to stay the course, but a file of healthy and easy recipes is what you really need. This shrimp and broccoli dish is tasty, low in fat and sodium and easy to prepare.


4 TB low-sodium chicken broth
1 TB dried cilantro
1 TB dried parsley
1 tsp dried basil
2 TB chopped green onions
2 TB orange juice
2 TB lemon juice
1 tsp. Dijon mustard
1/4 tsp black pepper
1 tsp. chopped garlic
12 jumbo shrimp, peeled and deveined
broccoli florets
1 TB canola or olive oil


Combine the chicken broth and all ingredients, except for shrimp, broccoli and oil.   Mix well.  Set aside 2 TB of the marinate.  Place the marinade in a bowl and add shrimp.  Make sure the shrimp is coated with the marinade.  Marinate in the refrigerator for about 30 minutes.

Heat a large skillet over a medium-high heat.  Add oil to pan coating evenly. Add shrimp to pan and sauté 1 minute. and then add broccoli.  Sauté for 3 minutes or until thoroughly cooked.  Add the remaining 2 TB of marinade to the shrimp.  Serve over brown rice.
