This is one of my family’s favorite holiday recipes.  Apricot chicken is not only delicious and easy to prepare, it is also low fat and low calorie.  Keep this recipe on hand throughout the holidays.  Place it with your Christmas recipes, under your favorite inspirational paperweight for safe keeping.  This dish can be prepared in advanced and frozen or refrigerated.  It’s perfect for a buffet dinner since it can be kept warm in a chafing dish.


6                    thin cut chicken cutlets
1/2 cup          apricot all-fruit spread
2                    tablespoons Dijon mustard
1                    cup fat-free chicken broth
1 bunch         scallions
1/2 cup           lemon juice



Soak chicken cutlets in lemon juice for about 10 minutes.  Spray pan with oil.  Brown chicken cutlets on each side in pan.  Combine ½ cup chicken broth, apricot spreadable fruit and Dijon mustard.  Spoon or pour mixture over chicken. Add cut scallions to mixture.  Cook in covered pan over low heat for approximately 20 minutes.  Add remainder of broth as needed.  Serve over rice or couscous.
