Easy Spanish Rice

One of my mother-in-law, Henrietta’s, favorite dishes was her Spanish rice, a delicious accompaniment to steak, chicken, and fish. It’s popular with both kids and adults and quick and easy to prepare.


1 small onion diced
1 small green pepper diced
1 cup white or brown rice
2 cups water
3 TB ketchup
¼ tsp. garlic
Dash of oregano
Few grains of crushed red pepper


1.  Sauté onion and green pepper until soft.
2.  Add water, rice, crushed red pepper, oregano, garlic powder, and ketchup.  Let it come to a boil on a  medium-high heat and stir.
3.  Cover and turn heat to low simmer.
4.  Cook for about 20 to 25 minutes until liquid is absorbed and rice is soft. Each grain should be singular when done
